Background: Imarti or Amriti is a sweet that is similar to Jalebi. It is made by deep-frying the batter in a circular flower shape, then soaking in a sugar syrup. Alternative names include Amitti, Amriti, Emarti, Omritti, Jahangir and Jhangiri/Jaangiri. Imarti is made with urad dal which has been fermented overnight to give it an airy feel. It is different from its cousin Jalebi in that jalebi is made from maida and imarti is made from urad dal.
